Snickerdoodle Cookies

Preheat oven to 350 degrees.

Line 10 by 13 baking sheet with parchment paper.

Ingredients

  • 2 1/2 Cups Almond Flour
  • 1/3 Cup Melted Coconut Oil
  • 1/4 Cup Raw Honey
  • 1 Tablespoon Fresh Lemon Juice
  • 1 Tablespoon Vanilla
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Baking Soda
  • Cinnamon

Directions

  1. In medium size bowl mix to together dry ingredients.
  2. Melt coconut oil on low heat.
  3. Add melted coconut oil, honey, vanilla, and lemon juice to dry ingredients. 
  4. Mix well.
  5. Scoop one teaspoon of mixed cookie dough and roll gently between palms. 
  6. Roll ball in cinnamon. Place on baking sheet.
  7. Flatten balls gently with the bottom of a glass.
  8. Bake in preheated oven for 9 minutes.
