Sweet Sensation Roasted Vegetables

1 Santuko knife - sharpened

Large cutting board

15 by 10 jelly roll pan

Parchment paper - optional - makes clean up a breeze

Cooking Time

35 to 45 minutes - depending on your oven

Yields

Deliciousness for 4 to 6 people

Ingredients

1 Butternut Squash 

1 Large Red Onion

4 Parsnips

1 Cup Parsley - lightly chopped

Olive Oil

Pink Himalayan Salt

Ground Black Pepper


Directions

  • Line Baking Sheet with parchment paper. Alternative to parchment paper is light grease bottom of the pan with coconut oil.
  • Cube Butternut Squash, Red Onion, and Parsnips
  • Rinse and lightly chop parsley
  • Place all ingredients on baking sheet - single layer
  • Drizzle lightly with olive oil
  • Sprinkle Pink Himalayan Salt and fresh ground black pepper
Please prepared pan in the oven. Roast at 375 for 35 to 45 minutes - depending on your oven - until tender.

Notes

This easy and delicious recipe brings out the natural sweetness of the vegetables. Great side dish for any meal or when craving a sweet sensation!
