Warm Butternut Squash Hash

Butternut squash can be cut and stored in refrigerator for up to a week.

  • 2 cups organic butternut squash, cut into 1 inch cubes
  • 1 organic yellow onion, diced
  • Salt and Pepper
  • Dried Oregano
  • 1 tablespoon coconut oil
  • 2 cups chopped organic baby spinach
  • 2 organic eggs - optional 


Peel and cut butternut squash into 1 inch cubes. Here is Martha's video explaining how to do this effortlessly.

Dice yellow onion and then chop the baby spinach.

Now you are ready to cook this simple dish.

  1. Heat salute pan on medium heat.
  2. Add coconut oil.
  3. Add yellow onion and cook for 3 minutes.
  4. Add cubed butternut squash. Cover pan and cook for 5 minutes.
  5. Add chopped baby spinach. Cook uncovered for an additional 3 minutes.
  6. If you wish to add eggs to this dish, cook 2 eggs sunny side up in another pan on your cooktop while you're  making the butternut hash.

Transfer hash into 2 individual serving dishes. Season with salt, pepper, and oregano to taste. Easy, delicious, and full of great nutrients to start your day!
